Organization Overview:

Mission of Organization: The Sea Pines Country Club is a private, full service, not-for-profit Club that provides quality services in modern, well-maintained facilities, which satisfy the social and recreational needs of our members.

Sea Pines Country Club is nestled in the beautiful Hilton Head Island, South Carolina within the Sea Pines Plantation. It is a private club that offers its members casual or fine dining in the clubhouse, a pro shop, pool and fitness facilities, tennis and golf.


Internship Responsibilities:

Job Description & Duties: I worked closely with the banquet manager and manager of catering sales. I observed the entire booking of an event, the set up and the operations of the event. I also gained knowledge and experience with the final evaluations of the event including Event Profit and Loss Sheets.

My Responsibilities included:

-Shadowing the Banquet Manager and Manager of Catering Sales

-Providing exceptional service to the members and guests of the Club when dining.

-Creating floor diagrams for all upcoming events.

-Accept supervision from supervisors.

-Work closely with all employees for excellent teamwork.

-Create a Wedding Guide for the Club to use for sales.


As I shadowed the Banquet Manager and Manager of Catering Sales I put together a list of responsibilities I observed:

-Works cooperatively with others and accepts direction from supervisor.

-Develops menus and makes necessary meal preparation schedules for all catered events based upon customer specifications, in conjunction with the Chef.

-Checks Pricing on all events and creates new pricing structure when necessary.

-Approves all invoices that go out to customers to insure all charges are included.

-Communicates all catered event scheduling with all other related areas of the Club such as security, maintenance, purchasing, etc., to ensure smooth setup and operation of catered events.

-Responsible for overseeing the processing and distribution of all catering function sheets to proper staff members.

-Checks to see that all room set-ups are done correctly for events.

-Attends catered functions, as schedule permits, to ensure that procedures are being followed and standards maintained.

-Makes recommendations concerning the improvement of quality and service of catered events.

-Performs special projects as assigned.


Requirements and Qualifications:

-Be at least 18 years of age

-Be enrolled in a University tourism or hospitality program


Benefits and Opportunities:

-$10.00 an hour

-$250 toward housing per month
